Tomato, Mozarella & Pesto Chicken
It always seems to be "dinner time"... doesn't it? I don't think there is a mum or dad out there who doesn't get stuck in an endless chain of dinners and longs for dinner time inspiration. Most of have a list of "go-to" dinner recipes that we churn out month after month - mostly because it's the easiest option and you know the ingredients you need to buy, or maybe it's because when you pop into online shopping it's already in your order history and ready to re-order! (Or is that just me?!) So I hope that I can change that today, not just for me but for you too!
This recipe is something I've come up with using one of our favourite sauces after our Italian holiday a few months ago. The Italians just do food so well, don't they? We didn't have a single grumble about food from the littlelies while we were away. We stayed in a guesthouse where dinner was a set menu every evening; we didn't choose our meals, we were just served. 'Take it or leave it!' And there were no complaints. Amazing what Italian food can do for little tummies' eating habits. Bright, colourful food full of flavour and using some delicious fresh buffalo mozzarella thrown it - who can resist that?
So, this recipe is my take on one of the gorgeous meals we were served one night in the beautiful southern Italian guesthouse: Tomato, mozzarella and pesto chicken. It's a tender chicken breast topped with a pesto and mozzarella crumb, baked with fresh tomatoes on top. Sounds complicated? Not at all! Read on...
4 chicken breasts
50g breadcrumbs, white or wholemeal (or a gluten free option if you prefer)
2 tbsp pesto (recipe on the blog)
Ball of mozzarella torn into small pieces
Cherry vine tomatoes (or any tomatoes will do)
What do I do?
Pre heat the oven to 180 degrees celsius
Mix the breadcrumbs with the pesto and the mozzarella pieces
Place the chicken breasts into a oven proof dish and top each piece of chicken with some of the pesto/breadcrumb mix
Place in the oven for 15 minutes
After fifteen minutes place the tomatoes on top of the chicken and return to the oven for another 10/15 minute until the chicken is cooked through
Serve with fresh vegetables, salad or whatever takes your fancy! It really is that simple. Chicken not your thing? It also works brilliantly on a piece of white fish or salmon too.
