Raspberry Chia Jam

One of life's little treats is some toast and jam on a cold winter's morning. But so many shop-bought jams contain enormous amounts of sugar - which do not make for clean little tummies or healthy, cavity-free teeth!

Making jam with chia seeds - those anti-oxidant packed little super seeds - is a good way to make jam which is both lower in sugar (thanks to the way the chia seeds expand with fluids, making the jam more viscous without the need for more sugar) and also higher in nutritional value. So we've been experimenting. We tried blueberry and strawberry, which I thought was delicious, but it did not fully meet the critical taste buds of Isabelle. It seemed to be the seeds that were the problem - the very source of my hidden healthy magic powers! Undeterred, I got creative and first blitzed all the ingredients in my much-loved Nutribullet. Once the chia seeds were safely hidden, and combined with raspberry, the house-hold favourite, it seemed to meet Little Miss's approval!!

So what do you need?

Ingredients

2 large handfuls of raspberries, fresh or frozen

1 tablespoon of chia seeds

1 tablespoon of water

honey to taste

 

And what do you do? Is it really that easy?

If you're into super quick jam making, then simply blitz all the ingredients in a blender or food processor and leave in the fridge to set for a few hours.

Alternatively mash up the raspberries to a consistency that you'd like your jam to be, add the other ingredients and leave in the fridge for the chia seeds to do their magic.

Try it on a slice of toast tomorrow morning or mix it into porridge or natural yoghurt. I think you'll like it!
