Springtime yoghurt bark
Well hello! It’s been a while hasn’t it? Time just seems to go by very quickly but hope you’ve been following along on Instagram and seeing all our food ideas on a day to day. I’m back today with a little simple snack and ‘snack activity’! Easter holidays are almost upon us so this is a great way to get kids in the kitchen and keep them entertained for a few moments at least.
Yoghurt bark is a clever snack as it almost tastes like ice cream, it’s full of creamy goodness & added fruit. It is perfect for sore little gums if you have teething going on . It is cooling and refreshing and these citrus version is delicious. Perfect for a Spring day!
Spring time Yoghurt Bark
To make a small batch-about 10 broken pieces, you will need:
250g plain greek yoghurt
1 orange, zest and juice
about 10 small pieces of cut orange flesh
You can also add maple syrup or honey to sweeten if you wish
In a large bowl, mix the yoghurt with the juice of the orange and half of the orange zest. Sweeten with honey or maple syrup if desired.
Pour onto a lined baking tray. Sprinkle with orange pieces and some extra orange zest. Place in the freezer until frozen
Remove from the freezer and break into small pieces and eat immediately.
This will keep in a freezer, covered for up to 4 weeks.
I hope you enjoy the Easter holidays and have a go at this little snack activity with your children. Juicing and zesting the orange are great fun for little ones and licking the spoon is always the best part! Of course, if you’re not a fan of orange then any fruity flavours will make this a tasty snack but we are loving the orange freshness this Spring!
