Beef and Broccoli Stir Fry

After all the Easter treats and indulgence, it is time to get back to routines and I hope, some light summery dishes for dinners this week. First up is a stir fry dish that is cooked in 5 minutes with only 5 minutes preparation. For me it is a win win, quick, tasty, nutritious and full of flavours. Children love the noodles and the tender stem broccoli dressed up with ginger and soy is a nice addition to the little strips of beef. Decorate the final dish with chopped chilli, coriander and sesame seeds for a big flavour punch. It makes it look pretty too! Here’s how:

Beef & Broccoli Stir Fry

250g beef strips (you can buy it ready cut or slice up a piece of steak if you prefer)

200g tenderstem broccoli

1 red chilli, finely sliced (optional)

3 tbsp soy sauce (I used reduced salt soy sauce)

1 tsp sesame oil

a 2cm piece of ginger, finely grated

1 garlic glove, crushed

1 small bunch of coriander

sesame seeds to serve

2/3 nests of noodles to serve (or you can serve with rice if preferred)

How to make Beef & Broccoli Stir Fry

Serves 4

Place your noodles in boiling water and set the timer for 5 minutes

Heat 1 tsp of sesame oil and add the garlic and ginger, cook for 1 minute on a low heat until starting to soften

Add the beef and broccoli and cook for 2 minutes.

Add the soy sauce and allow to bubble and burn off

Remove from the heat, drain the noodles and place on a serving dish. Serve the beef and broccoli on top of the noodles and decorate with chopped coriander, chilli and sesame seeds. (I use kitchen scissors to chop the coriander and chilli over the top of the dish which makes it very speedy to do)
