All Things Back To School

Hello, it's me! It has been a while, I know. We've just been having too much summer fun - busy with holidays, day trips, games and occasional (read constant) bickering! But the inevitable is on the horizon - Back to school! 

In preparation, I thought I would pop back on the blog and share some ideas on how to get through the week with some simple lunch and dinner ideas that you can prepare ahead, or have on the table in 15-20 minutes at the end of those long, busy days.

For me, and I suspect for most parents, being organised is the key to success in most aspects of parenting. Spending some time at weekend preparing for the week ahead is time well spent. I try to meal plan, but I'm not always religious about it, though I usually have three or four meals planned for the week, and I’ll mix them up depending on how the week plays out. I try to shop once a week, often online, which means I can keep an eye on the spending but it also saves time. I never enjoy shopping with a toddler in tow-can't think why?

I will often do some batch cooking at the weekend, filling up the freezer with some lunchbox fillers, some meals and sometimes some snacks ready to take out of the fridge or freezer later in the week. Here are my favourites:

Mini Lunch box Muffins

Vegetable Fritters or Sweet Potato and Pea Fritters

Cheese savoury loaf - Slice this up before freezing and you have an instant lunchbox filler without the need to make sandwiches.

Mini Meatballs for Pasta

Vegetable Chilli

Vegetable Pot Pies

Snacks always include some energy balls and banana bread.

If the weekend doesn't allow for preparation then I use my go-to list of quick dinners which can be prepared in minutes, leaving me more time to unpack from the day, help with homework and reading, and get out to the next after school club.

Our favourites are:

Roasted Tomato Mozarella Pasta

Baked Risotto (which is much quicker and easier that you would think)

Broccoli and Cheese Quesadillas

Clean Little Chicken Dippers (if you make them small the cooking time is very short)

I hope this is a little help to you all in the next week or so, back to school is such an emotional time for us all. There are parts of us all, I am sure, that are looking forward to some routine and structure, but also feeling sad watching another year tick by and our little ones becoming more and more grown up. It is changing times for me here with all three of mine going to school, not all full time, but all in one place - which is a first! So who knows, I may now have more time for some recipe creating and blogging.
