Simple Summer Tarts
Hasn't it been a hot few weeks here in the UK? Aren't we so lucky to be waking up to sunny mornings, breakfasts outside and warm balmy evenings? But, who wants to be cooking over a hot stove on days like these when we can be out enjoying ourselves in the evenings at the park with our children making the best summer memories?
Here is a simple little supper idea which has a little cheat ingredient but is tasty and makes a perfect summer lunch or dinner. Simple ingredients which children enjoy and making them into mini size makes them even more perfect for those little fingers. They go so well with salad or any raw vegetables and they fit nicely into a lunch box too.
1 sheet of ready rolled puff pastry
2 tbsp cream cheese
10-15 baby tomatoes, sliced
1 tbsp chopped fresh basil
HOW TO MAKE SIMPLE SUMMER TARTS
Pre heat oven to 180C fan
Lay out the ready rolled sheet of puffed pastry on a chopping board
Cut the pastry into 12 even sized squares
Score each square to make a little border on each side (see photo below) and set aside
Mix the cream cheese with the fresh chopped basil
Spread a little of the cream cheese mixture on each square inside the border
Layer three or four tomato slices on top and place on a baking tray
When you have filled all the squares, place in the oven for 15 mins until the edges of the pastry are golden brown and the tomatoes are softening.
Remove from the oven and top with some fresh basil. Serve with a summer salad or in a lunchbox with some raw vegetables.
