Berry Oaty Breakfast Pots

If you're a regular reader, you will know we enjoy breakfast here at Clean Little Tummies. This week, I'm back with another simple idea to help mix up your breakfast menu. These tasty little pots of goodness come together quickly in the morning, and there's only one bit of baking involved.

Berry Oat Breakfast Pots are exactly like they sound - a pot of layered berry, oaty goodness. Like all our recipes, the ingredients are simple (thereโ€™s only 5), and you can make your own variations if you like. These pots have a healthy balanced level of sweetness which you may not be getting from the cereal box! You can also make a big batch of the crunchy oats to keep you going through the week. If you're in a hurry in the mornings, these little jars are perfect to take with you, and they make a good snack too.

BERRY OATY BREAKFAST POTS

SERVES: up to 6 portions

Preparation Time: 5 minutes

Cooking Time: 10-15 minutes

INGREDIENTS

200g oats

75g coconut oil

maple syrup

frozen berries (here I've used blueberries but any work well)

natural yoghurt

HOW TO MAKE BERRY OATY BREAKFAST POTS

Pre heat the oven to 180C/160C fan

Line a baking tray with baking parchment

Melt the coconut oil and then mix it with the oats

Mix until all the oats are coated

Spread out evenly on the baking tray

Drizzle over the maple syrup-add as much or as little as you like depending on how sweet you would like your oats

Bake for 10 mins

Remove from the oven, stir well and bake for another 8-10 minutes, watch closely as it is quick to burn!

Leave to cool, once cooled it can be kept in an airtight contained for up to two weeks

BUILDING YOUR BERRY OATY BREAKFAST POTS

When you're ready for breakfast, place the natural yoghurt in the bottom of a jar, top with frozen berries and a layer of the oats. Repeat until your jar is full and you've got a tasty breakfast ready to go.

Or, for perhaps a less relaxed breakfast, let your Clean Little Tummies build their own!

If you wish to add nuts or seeds to your oats do so before serving. Fresh fruit also works well too.

Happy Breakfasting!
