Greek Chicken Tray Bake

Summer flavours are here! Healthy, vegetable-packed dinners are perfect for summer evenings and weekend family meals. This Greek Chicken Tray Bake is something everyone can share and enjoy, and it’s perfect if you're doing baby-led weaning too. There are lots of vegetables and herbs, as well as some succulent chicken for a satisfying meal. You can serve this with whatever you like - we enjoy making stuffed pittas with the chicken and vegetables, all topped with a fresh tzatiki, which is very simple to make on the side.

As with all my dinners, this is quick to prepare and quick to cook. You can swap in any other vegetables you might fancy, or take out the chicken if you're looking for a meat-free dish (these vegetables taste delicious with just feta sprinkled on top). I love a dinner that is all in one dish- less washing up, less mess and everyone can just help themselves.

If you want to prepare ahead, mix vegetables and chicken with the marinade ingredients and leave in the fridge until ready to cook.

GREEK CHICKEN TRAY BAKE

SERVES 4/5

PREPARATION TIME 10 minutes

COOKING TIME 25 minutes

INGREDIENTS

3 chicken breasts

2 peppers

1 courgette

1 red onion

a small bunch of vine tomatoes

MARINADE

4 tbsp olive oil

1 tbsp dried thyme

1 garlic glove, crushed

juice & zest of one lemon

a sprinkle of fresh mint (optional)

METHOD

Pre heat the oven to 180 C Fan

Cut the chicken and vegetables into bite size pieces and set aside.

Mix the olive oil, lemon juice, zest, crushed garlic and dried thyme together.

Pour over the chicken and vegetables and stir well

Place in a oven proof dish or on a lined baking tray.

Either place the dish in the fridge until needed or place in the oven for 10 minutes.

After 10 minutes stir well and return to the oven for a further 10 minutes

Then remove from the oven and place the vine tomatoes on top. Return to the oven for a further 5 minutes (cooking time total is 25 minutes) until the tomatoes are just cooked and all the chicken is cooked through. Sprinkle over some fresh mint. 

Serve with pittas, rice or new potatoes and some tzatziki on the side.  (To make tzatziki, mix natural yoghurt with some chopped cucumber, chopped fresh mint and lemon juice).
