Bircher Museli Clean Little Tummies Style!
I’m always trying to mix it up at breakfast time to expose the Clean Little Tummies to different flavours. This week, I've added Bircher Museli to our breakfast menu. This recipe is an oldie but a goodie, and always a hit with the littleies, so I thought I'd share it with you. It uses simple store cupboard ingredients, mixed in with some fridge ingredient staples, which make it easy to make. There’s also the option of adding some lovely additions - like nuts, seeds or berries- to mix up the flavours and add extra nutrition. My favourite thing about Bircher Muesli is if you make up a big batch on a Sunday evening it can last up to three or four days in the fridge - so you've got breakfast sorted for the best part of the week before the week has even started! Win!
Here is the basic recipe for a big batch:
100g rolled oats
2 apples, grated
200g natural yoghurt
1 tsp cinnamon
And here’s how you make it:
Mix the oats, grated apple, cinnamon and yoghurt together in a large bowl. Add in your nuts, seeds, dried fruits and any other extras you like (see below). Stir well and cover, leave in the fridge overnight. Divide into portions in the morning. Add any additional toppings you may like including fresh fruit.
Sprinkle with toppings, and pop in the fridge.
Here are some of my favourite topping ideas:
50g mixed nuts
50g mixed seeds
50g dried fruits, raisins, sultanas, cranberries, apricots
1 tbsp milled flaxseeds
For toppings you can use:
chopped fresh banana
a drizzle of honey/maple syrup/date syrup/nut butter
a sprinkle of cinnamon/ mixed spice
So there you have it, a pick and mix breakfast to suit all the family.
