Little Baked Eggs
The Clean Little Tummies Little Baked Eggs make for truly the simplest of breakfasts or brunches, so I thought I would share with you my winning combinations. Quantities are approximate; just add as little or as much as you like (although you’ll need the egg!). You will also need little ramekin style oven-proof dishes. Simply assemble the combo, crack an egg, bake and serve, adjusting flavours to individual pots if you need to, and - voila!- you have a lovely family meal you can all eat together.
For all options, pre-heat the oven to 200C Fan. When cooking I place all the pots on one baking tray to make it easier to get them in and out of the oven.
Baked Eggs with Smoked Salmon
In each pot place a handful of chopped smoked salmon, some chopped spinach and crack open an egg on top. Place in the oven for approx 8 minutes until the eggs are cooked to your liking.
Baked Eggs with Chorizo, Spinach & Feta
In each pot add some chopped cooked chorizo, some chopped spinach, crack an egg open on top and sprinkle with some chopped feta. Bake for 8-10 minutes.
Baked Eggs with Spinach & Cheddar
In each pot add some chopped spinach, crack an egg on top and sprinkle with grated cheddar. Baked for 8-10 minutes.
Before popping these little pots of yumminess into the oven, season with some black pepper or paprika or any other spice you might like.
Serve on their own or with some toast. (The ramekins are clearly hot, so I usually spoon out the eggs onto children's plates once they've chosen the pot they'd like to avoid burnt fingers!) A truly tasty breakfast that I think your Clean Little Tummies will enjoy.
