Festive French Toast
Season’s Greetings Readers! This really is the busiest season isn’t it? Full of fun but also a very long to do list for all families; presents to buy, presents to wrap, food to buy and prepare, nativity costumes to prepare and Father Christmas to visit….the list goes on. If amongst the madness you have a slower morning then I urge you to try this Festive French Toast for a seasonal and fun breakfast. It is quick to make, (you don’t have to make the Christmas shapes although it is a fun task for little helpers whilst you prepare the fruit) and it is full of Christmas flavour and cheer.
For the apple topping
1 small apple, cored and chopped
1 small handful of dried cranberries
1/2 tsp cinnamon
Place all the ingredients in a small pan on the stove with a tablespoon of water
Simmer the ingredients on a low heat for 10 minutes or until the apple is softened
For the toast
6 Slices of wholemeal bread (or bread of choice) thick slices work the best
2 eggs, lightly beaten
1 tsp cinnamon
1 tsp maple syrup
1 tsp vanilla extract
oil for frying
Use a cutter to cut the bread into shapes or simple cut the crusts of each slice
Mix the cinnamon, vanilla and maple syrup into the eggs
Lightly coat the bread shapes in the egg by dipping the shapes into the egg
Heat a shallow pan on the stove with a small amount of oil, we use coconut oil to add some extra flavour to the toast but any works.
Add the toast to the hot oil and cook on both sides until golden brown
Serve immediately with some apple topping and a drizzle of maple syrup
