Coconut Maple Kale Chips
Hello September! Another summer done, another Autumn to look forward to. With back to school in full swing, I'm back to packing after school snacks! I thought this week I would share one of my latest Clean Little Tummies snacks with you. It is an easy snack, takes only 15 minutes to prepare, and has been a winner here for the first week of term (and I am pretty partial to them too!)
Kale is a very "on trend" at the moment; it's on all the foodie instagram feeds, features in all the green smoothies, and finds it's way into all the buddha bowls you see - but it is simply not something my Clean Little Tummies tend to enjoy. Hide it in a smoothie with a banana and some berries and it will go down, but otherwise it is a definite no no....Until Kale Chips! Admittedly it has taken a few attempts, especially with the youngest little one, but sweetened up with coconut oil and maple syrup and it seems to be an acceptable snack or side now. So I urge you to give it a go - they might just surprise you.
Here's what you will need:
200g of kale.
1 tbsp coconut oil
1 tbsp maple syrup
1 tsp ground cinnamon
How to make your Kale Chips:
Preheat the oven to 160C and prepare your kale by removing all the leaves from the stalks. Discard the stalks and wash and dry all the leaves thoroughly. This will help to make crunchy chips.
Place the kale on a lined baking sheet
Meanwhile, melt the coconut oil, maple syrup over a low heat, once melted stir in the cinnamon
Pour the melted mixture over the kale and use your hands to massage the mixture into the kale leaves ensuring that all the leaves are well coated, and that the kale softens
Place in the oven for approximately ten minutes, turning once to ensure an even bake.
Leave to cool on a cooling rack and then enjoy. Store in an airtight contained for up to 2 days.
Enjoy at any time of the day.
