Summer BBQ Pesto Chicken Kebabs

It is summer in England, and whilst a lot of our weather doesn't seem to be showing "summer" traits, we have managed to grab the odd sunny Sunday afternoon for a BBQ here at Clean Little Tummies. We love a BBQ, mainly because the cooking falls to Mr Clean Little Tummies and Mummy can socialise with friends and enjoy some of the sunshine (whilst it lasts).

A favourite little recipe for the grill is our Pesto Chicken Kebabs. They are very easy to make, add colour to what is usually a mostly charcoal meal, and add some vegetables to the tummies of our Clean Little Tummies. The fun of having food on sticks makes them all the more tasty. (And if the weather doesn't hold, you can pop these in the oven and they taste just as good). I have used peppers, mushrooms, aubergine and red onion, but you can use any vegetables that take your fancy or are in season.

Ingredients to make 8 kebabs:

2 chicken breasts cut into small pieces

1 red pepper, cut into small pieces

1 yellow pepper, cut into pieces

24 button mushrooms

1 aubergine cut into small pieces 

a handful of basil leaves (optional)

3-4 tbsp pesto (for our simple recipe click here)

You will also need 8 skewers. If using bamboo skewers, soak them in cold water before using to avoid them burning on the BBQ.

How to make your kebabs:

Once your chicken and vegetables are chopped these are really quick to put together. 

  • Mix your chicken into the pesto and leave to marinate in the fridge. If you have time you can marinate your chicken in pesto for a few hours or overnight, but if not, stir the chicken well in the pesto and then start building your kebabs.
  • I like to give the vegetables a quick sautee in a pan with a tablespoon of olive oil before putting them on the skewers so they cook more quickly on the bbq but this is optional if you're short on time. 
  • Once the vegetables are sautéed and your chicken has soaked up the pesto, put the pieces onto the skewers. I like to start and finish each skewer with a basil leaf for some extra flavour and then just mix chicken with vegetables to make colourful, flavoursome kebabs.
  • To cook, place on a hot bbq grill and cook until the chicken is cooked through and they have a chargrilled look about them!  

Serve them with a green salad, or we love ours with some cous cous.
