Seeded Blackberry & Apple Breakfast Bars

Well, I didn't expect to be writing a post with blackberries in August. Summer has been bit of a washout here in the UK, but there has been a silver (or purple?) lining: The abundance of blackberries due to all the rain (and the tiniest bit of sunshine back in June).

My Clean Little Tummies have been so excited picking blackberries on all our summer holiday walks, I thought I should come with a recipe to use them up. These Seeded Blackberry and Apple Breakfast bars do just that, and you can make a few batches now and store them in the freezer, ready for those busy back-to-school mornings. We have a few fun day trips planned for the last couple of weeks of the holiday, and these will make great on-the-go breakfast snacks for our early morning car journeys.

Simple ingredients; a simple method - you will love these new breakfast bars on your breakfast table in the mornings. The ingredients are healthy, full of slow-release energy and the fruits to keep your Clean Little Tummies full until lunchtime.  

What you will need:

300g oats

200g blackberries & 50g to stir through before baking

1 large apple, grated and squeezed (to remove excess juice)

2 tbsp mixed seeds

200ml almond milk (or milk of your choice)

100ml maple syrup

To make your Seeded Blackberry & Apple Breakfast Bars:

Pre heat the oven to 180C and line a 20cm by 20cm baking tray with baking parchment.

Combine all the ingredients in a bowl and mix well or pulse together in a food processor-you will end up with a purple mixture which your Clean Little Tummies will love!

Stir through the remaining 50g of blackberries.

Transfer the mixture to your prepared baking tray and flatten down with the back of a spoon so you have an even layer of mixture in the tin.

Bake in the oven for about 15 minutes until cooked through and golden brown on the top.

Transfer to wire rack to cool down. Once cool cut into squares and serve for breakfast with a glass of milk for Clean Little Tummies or a freshly brewed coffee for a Happy Mummy.
