Mini Muffins for Summer Picnics

For us, summer holidays are filled with lots of picnic lunches - that's the plan at least, admittedly the first picnic today had to be eaten inside, but we still like a picnic!

Sandwiches, wraps and rolls are the obvious go-to picnic foods, but sometimes it is nice to mix things up. Today we have a quick little recipe packed full of green goodness to fill up your Clean Little Tummies on your picnics - mini muffins!

These mini muffins are simple to make and, with added grated courgette and chopped spinach, are packed full of vitamins and colour (grated carrot, chopped peppers or sweetcorn can also work).

I peeled my courgette - it hides them better, but is not necessary - and grated them, which means they cook more quickly in the muffin batter. The grated cheese adds some calcium, but also a good cheesy flavour. I've made mine in a mini muffin tin so they are bite-size picnic food size, but they also make good full-size muffins if your children are older. 

My favourite bit about these muffins is how well they freeze: Place them in an airtight container and take them out of the freezer when you need them. I take them out of the freezer in the morning, pop a couple in each lunchbox with some raw vegetables and they will be defrosted by lunchtime. Not a sandwich in sight! Much easier for those busy mornings. 

Here's what you need

1 courgette, peeled and grated

1 large handful of baby spinach chopped (or frozen spinach works well too)

150g grated cheese, save some for sprinkling on the top before baking

1 egg

175g plain or wholemeal flour

1 tsp baking powder

110ml milk

Here's how

Preheat the oven to 160C.

Mix all the ingredients together in a large bowl or pulse together in a food processor. 

Spoon the mixture into your greased muffin tin (top tip-I use an oil spray to spritz oil in each muffin hole) This will make 24 mini muffins or 12 regular sized muffins.

Bake in the oven for 10-12 minutes for mini muffins or 15-20mins for regular muffins.

Serve warm or cold with raw vegetables and fruits on the side. Perfect for those summer picnics. Now let's hope the sun shines!
