Strawberry Chia Jam
A really quick and tasty alternative to the sugar-laden jams around, Strawberry Chia Jam is made in minutes and is perfect on toast, in porridge or drizzled over pancakes. With only 4 simple ingredients you simply can't go wrong.
Full of strawberry enthusiasm after our strawberry picking trip, Belle and I set about making Strawberry Chia Jam. In all honesty, all I did was lay out the ingredients and she made it and licked the spoon! It really is that easy.
So what do you need?
2 large handfuls of strawberries
1 tablespoon of chia seeds
1 tablespoon of water
honey to taste depending on the sweetness of your strawberries
To make your jam
If you're into super quick jam making, then simply blitz all the ingredients in a blender or food processor and leave in the fridge to set for a few hours.
Alternatively mash up the strawberries to a consistency that you'd like your jam to be, add the other ingredients and leave in the fridge for the chia seeds to do their magic.
It will last for about 48 hours in the fridge.
It tastes so great on a slice of fresh bread or on some porridge. It works well over some overnight oats or plain yoghurt too. Give it a try next time you have some spare strawberries.
