Our last batch of Summer Ice Lollies were such a hit with all of you, it got me thinking of more ways to cool off on those long, hot summer days. Being so hot, no one wants to spend longer in the kitchen than they have to, so for me summer is more about blitzing than baking. Enter the Tropical lollies! They are super simple, with only three ingredients, and naturally sweet and refreshing. (Just make sure you make a big batch, as they'll be back for more!)
These Tropical Lollies have all natural ingredients so they aren't full of the nasty colours and preservatives like some of the ones you may find at the ice cream van. I use frozen mango as it works out much cheaper and also takes away the fiddly task of cutting the mangos!! I use two tablespoons of honey but sweeten to your tastes. If you want to add some raspberries then that also makes a good combination, but we like the tropical taste of these. These make a great snack or dessert and I am getting into the habit of taking them for the after school snack packed in my mini cool bag!
400g mango- I use fresh or frozen
a can of coconut milk
2 tbsp honey
How to make the Tropical Lollies:
Place all the ingredients in a blender and blitz until smooth.
Pour into lolly mould and freeze for at least 4 hours until frozen.
Enjoy on a hot summer day!
