Sweet Potato Fries with Nourishing Avocado Dip
Sometimes the simplest of suppers are the best kind of suppers, don't you think? And for me and my clean little tummies, there's no supper quite like a bowl of homemade sweet potato fries to give you that simple, "food hug" feeling at the end of a long day.
Sweet potatoes are real winners here at Clean Little Tummies HQ, not just for their yummy taste, but because making them into little fries has also turned out to be the perfect finger food for Sam as he has worked his way through the baby-led weaning stage. (Perhaps a little too successsful...He will literally eat a whole bowlful, and then start taking them from his brother and sister!)
But, I know, sweet potatoes on their own aren't exactly a square meal, are they? That's why I opt for making the Clean Little Tummies Nourishing Avocado Dip as the perfect side: A tasty addition full of good, nourishing fats, vitamins and colour. (Avocados also happen to my favourite!)
Not a complicated recipe, but something I wanted to share with you as it can make a very simple side dish to chicken, or salad, or a quick lunch. Cold sweet potato fries go down well in lunch boxes too - why not give them a try? Making a big batch at the beginning of the week and keeping them in the fridge to add to lunch boxes, salads and last minute dinners can really make busy, weekday life a bit easier. Ingredients for a big batch of fries
4 sweet potatoes - depending on size
2 tbsp of olive oil
seasoning to taste
To make your batch of fries
Pre heat the oven to 180C and line two baking trays with baking parchment:
Peel and chop your sweet potatoes into finger sized chips. I usually make mine about 5cm long and 1cm wide so they are small enough for little fingers and also don't take too long to cook.
Place on the prepared baking trays and drizzle over the olive oil. I then like to use my hands to mix the oil in in order to make sure all the potatoes have some oil on them.
Place in the oven for 10-15 minutes and then turn them. Make sure they are all turned so get a nice even crispy fry. Place back in the oven for another 10-15 minutes until all a golden brown and the potatoes are cooked.
To make the Nourishing Avocado Dip
Our Nourishing Avocado Dip is super simple and can be prepped in just a few minutes using a blender:
Mix 1 avocado, 1 tbsp of yoghurt, juice of half a lime and some seasoning.
Simple! There you have it! Perfect for dipping your Sweet Potato Fries.
