Little Trekkers Trail Mix

Nuts! I am nuts about nuts! I love snacking on nuts, nut butters are my little slice of heaven on apples and they pack a punch in a morning smoothie that will keep you full and not hangry all morning. But truth be told my Clean Little Tummies don't share my love of nuts. Nut butters are passable, cashew nuts win too but other than that nibbling on nuts is not their thing. Unless they're mixed up in this trail mix of mine. 

We all know nuts are one of the good fats, packed with protein, fibre and essential fatty acids. Being rich in vitamins and minerals, I was on a mission to find a way to get them into my Clean Little Tummies. Our Little Trekkers Trail Mix seems to be the winning formula. Mixed up with some sweetening honey and coconut oil and then nestled amongst, dry fruit, seeds and some teeny tiny drops of chocolate, suddenly nuts seem more acceptable. (Please note with Sam, my smallest Clean Little Tummy I am still very careful about him eating nuts due to choking - I always make sure his portion is chopped very finely, please do the same for yours!).

It is a simple recipe which lends itself to your pantry contents. You can substitute nuts, fruits and seeds as you like/need, but try to keep the proportions the same to give a healthy balanced dose of energy. I am sure my Clean Little Tummies would be happy with a higher proportion of chocolate drops, but that's not really the point!

To make one small jar, you will need

120g nuts (any combination you like)

80g dried fruits, cranberries, raisins, sultanas, apricots, apples, blueberries

40g seeds

20g chocolate chips (optional)

1tsp honey

1tsp coconut oil

What you need to do

Pre-heat the oven to 180C & line a baking sheet with baking parchment paper.

Melt the honey and coconut oil together and add the nuts, stir well until they are all coated in the mixture.

Spread evenly on the baking tray and place in a pre heated oven for 5 minutes.

After 5 minutes, stir well and add the seeds.

Bake for another 5 minutes until all nuts and seeds are golden brown.

Leave to cool.

Once cool, mix in the dried fruits and chocolate chips if using. Enjoy!

The trail mix will keep in an airtight container for up to a week.
