Mini Energy Bites For Clean Little Tummies
Here at Clean Little Tummies it's safe to say we're big fans of energy bites and balls! At any given moment we have a variety on the go at home, each featuring different nuts and flavours, some bought, some home made. They make such a delicious and nutritious mid-morning snack or after-school pick me up. One of our favourite flavours is the "cashew bar" - there are some yummy ones on the market, but we've recently become fans of the nibbles from the lovely people at Nakd. But after slowly accumulating a few too many Nakd wrappers, I started thinking... we could always create our own mini version, in the true essence of Clean Little Tummies! (And save the costs, and the packaging!)
This recipe could not be simpler: Mix two ingredients in a food processor, with a sprinkle of cinnamon, and you have the perfect combination of flavours in a size that suits small fingers. Bag them up as you see them in the shops, and you are ready to go! If dates and cashews aren't your thing, add some raisins, change the nuts or add some cacao to make them a little chocolatey - you decide! A perfect little snack, which you know contains nothing but goodness, and nothing processed whatsoever.
So all you need is...
20 dates finely chopped
a tsp of cinnamon
And all you need to do is...
Place all the ingredients into a food processor with a tablespoon of water and blitz until combined.
You may need to stop a few times to scoop the mixture from the sides, but keep going until you have a nice smooth paste.
Roll the mixture into teeny tiny balls, place in the freezer for an hour or so and then store in the fridge until you or your Clean Little Tummies need an energy boost. As you can see from the picture they don't last long in our house! This recipe will make about 40 mini energy balls.
