Perfect Protein Pancakes with Blueberry Chia Jam
Once again Pancake Day is almost upon us - a fun excuse to heat up the pan and get some flipping going on. There's also the annual school pancake race to attend (important stuff!), so here I am with a quick protein-packed pancake option, not just for Pancake Day, but for any occasion you fancy. Perhaps Pancake Day can be the inspiration for your first batch this year.
Protein is so important for keeping Clean Little Tummies full and ensuring they have enough energy for the 1001 activities they fit in during the day. It aids concentration too, so knowing they have a good dose of protein before they start their day at school is very reassuring for happy mummies.
This is very simple pancake recipe with only three ingredients, (and not the ingredients you would expect!), making them super quick to whip up. Layer them up with some blueberry chia jam, berries and yoghurt, and you have a winning breakfast/brunch/treat! And they taste delicious. And have had the thumbs up from the Clean Little Tummies...need I say more!
All you need is...
1 tsp baking powder
All you need to do is...
Blitz all the ingredients in the blender and cook in batches according to the size of pancakes you'd like. Use sunflower or vegetable oil in a hot frying pan. Due to the lack of flour they are slightly more tricky to flip (or may it is just me or my pan!) but a non stick pan and a good swig of oil should do the trick. This makes about 6 small pancakes.
Layer up with some blueberry chia jam-use our raspberry chia jam, just exchanging raspberries for blueberries and a good dollop of natural yoghurt & berries. Or simply add some berries and a drizzle of maple of syrup.
They can be made ahead of time and kept in the fridge, just make sure you layer them between baking parchment so they don't get stuck. Heat them up for a few seconds in the microwave as needed. Perfect if your mornings are as stressful as ours!
