Clean Little Breakfast Muffins

We're on half term this week, so our mornings have been slower, more relaxed and just generally more pleasant (and with a lot less nagging!) But, of course, this week won't last forever (sigh) so I'm here with a new breakfast idea that is ready to go first thing and also makes a lovely end of half term activity for your Clean Little Tummies.

We've been making Clean Little Breakfast Muffins over here, and they are so tasty! Before I had finished making my cup of tea, Samuel has eaten his whole, and for once there wasn't any hidden away in his high chair or on the floor! They're super simple to put together, full of natural sweetness, fruity flavours and wholesome oats. Sounds like a perfect breakfast combination to me. 

This recipe makes a batch of 12. They'll keep for a couple of days in the fridge or put them into an airtight container and freeze them for when you need them. They are delicious warm, I admit to liking some nut butter on mine too, but eating them on their own and cold works too. Serve them up with some fresh fruit or a smoothie and you have breakfast that will keep your Clean Little Tummies filled up until lunchtime (& yours too).

To make these delicious Breakfast Muffins you will need:

225g wholemeal flour

2 tsp baking powder

2 eggs

100ml vegetable oil

1 large banana mashed

150 g plain yoghurt

80 ml maple syrup

5 medjool dates, chopped

50g pecans, chopped

50g oats

What to do: 

Pre heat the oven to 180C Fan and grease a 12 hole muffin tin.

Mix the flour, baking powder, eggs, yoghurt, oil, maple syrup and banana until they are all well combined. I mix mine using my kitchen aid.

Add the dates, the pecans and 30g of the oats and mix well.

Divide into the muffin holes.

Sprinkle the muffins with the remaining oats.

Bake in the oven for 15-20 minutes until golden brown and well risen. Check they are cooked by inserting a skewer into one muffin, if it comes out clean they are ready to cool and eat!
