Clean Little Christmas Cookies
The Festive period has well and truly arrived. Everywhere we look we spy a Father Christmas, much to little Joe's amusement. There are Christmas lights all over the place, every other song on the radio is a Christmas hit and there is Christmas food everywhere you look. Yum!
Christmas is a time for indulgence and enjoyment so whilst there will be definitely be lots of treats in our house over the festive period, it is also nice to have a few festive recipes up my sleeve for my Clean Little Tummies. And I have Christmas cookies which we have been busily testing, tasting and making into Christmas stars, gingerbread men and cute little Christmas Trees.
On Sunday our Advent activity (see An Advent Calendar of Family Fun) was making Christmas Biscuits. We made the dough together in the morning, left it to chill whilst we went out and about and then spent the afternoon rolling, cutting, baking and tasting - all dressed in our Christmas jumpers!!! So cute! We had such fun, it's so nice in our busy lives to slow down a little and actually enjoy our time together. Even Sam joined in, which is one of the first activities he has really been able to join in with.
It's a quick recipe, who wants to spend more time than they have to in the kitchen at this time of year? It's a 'put-it-all' in the food processor dough or a 'put-it-all' in one bowl and give a good stir. Some chilling time is required so that the dough rolls and cuts better but otherwise it really is simple and quick; a good go to recipe for a sweet treat at this time of year. It has been a nice festive after school snack this week too.
So what do you need?
250g plain flour
100g ground almonds
50g unsalted butter or coconut oil (softened)
1 tbsp honey
5 medjool dates, chopped (very finely chopped if you're not using a food processor)
1 tsp baking power
1 tsp cinnamon
1 tsp ground ginger
1/2 tsp vanilla extract
You will also need festive cutters and a rolling pin!
And here's how you do it...
Mix the dry ingredients in a bowl, add the egg, honey, butter and dates.
Mix together until they form a dough. You might find it easier to use your hands, a perfect messy activity for a clean little tummy!
Place all ingredients in a food processor and blitz until it forms a dough
Wrap in cling-film and refrigerate for at least 15 minutes.
Pre heat the oven to 160C
Roll out the dough until it is about 5mm thick. The cookies will rise slightly when they cool.
Use your cutters to cut out shapes and place on a baking tray.
Bake in a preheated oven for 8-10 minutes until golden brown. If making bigger shapes then will need longer, watch carefully as they can burn quite easily.
Enjoy with a hot cup of tea and a good Christmas film.
