Clean Little Chicken Dippers
It's all done for now, again! Halloween is done, half term is done (minus the on going backlog of washing and cleaning) and so it's time for some new dinner ideas to get us through to Christmas! First up this week is some Clean Little Chicken Dippers. Chicken nuggets are often a favourite with children, but they do have a very bad reputation in the world of children's food. So I'm here with a Joe Wicks (who doesn't love a bit of Lean in 15?) inspired recipe that will suit your Clean Little Tummies and make you a happy Mummy or Daddy, without any highly processed 'badness' entering little your Little Tummies.
Little ones love a fun meal, one that they can eat with their fingers, do some dipping and generally have some fun with. Our Chicken dippers do just that. They are small and perfect for a baby-led finger food but also good for older children. They take very little time to cook, so they can be whipped up quickly after school run/swimming/work. They're also a good recipe to get little hands involved with (if you can stand the mess). If you need to cook them earlier in the day or the night before and pack them in a box for tea on the run then they are delicious cold too or they can be reheated. Any dip will go nicely - tomato-based ones are good; a more spicy dip if you fancy it, or even just some natural yoghurt. You can serve them with whatever you fancy: Homemade sweet potato fries are good, but this time we went for a roasted pepper and tomato dip, rice with peppers and some corn on the cobs on the side. Lots of colour to go with the Clean Little Chicken Dippers.
It's really simple: Cut your chicken into small dipper-size pieces, coat them in some beaten egg, roll them in the ground almonds and oats, place on a baking tray and bake for 10-15 minutes. Voila! Super quick and super easy. In this recipe I have used two chicken breasts which will make about 16 little dippers. This will depend on the size of the chicken breasts you have and how big/small you would like them.
So here goes... What do you need?
2 Chicken breasts cut into small finger shaped pieces
50g ground almonds
1 egg beaten
And to make...
Pre Heat the oven to 200C
Mix the ground almonds and oats, season if you like (no salt for under ones) or add some spice, paprika, chilli powder...you choose!
Dip each piece of chicken in the beaten egg and then roll in the ground almond and oat mixture.
Shake off excess and place on a lined baking sheet.
Bake in the oven for 10-15 minutes, turning halfway until golden brown and the chicken is cooked through. This may take longer if you have made larger dippers.
Serve with rice, sweet potato fries or mash, vegetables or salad. Anything that takes your fancy. Hope your Clean Little Tummies enjoy them as much as mine.
