Little Baked Eggs

The simplest of breakfasts or brunches, so I thought I would share with you my winning combinations for an easy mini pot eggs brunch. Quantities are approximate this time, just add as much as you like. You will need little ramekin style oven proof dishes. This makes a lovely family meal that you can all eat together, adjusting flavours to individual pots if you need to.

Loaded Sweet Potato Nachos

Do you ever just want an easy-sharing type of lunch, dinner or snack? Something you can nibble on together whilst chilling in front of a film? (Not that I let my children eat on the sofa, of course, because it is new- hello uptight parents!) But does the thought of laying out a calorie-dense bowl of junk give you a case of the mother (or father) guilts?

Bircher Museli Clean Little Tummies Style!

I’m always trying to mix it up at breakfast time to expose the Clean Little Tummies to different flavours. This week, I've added Bircher Museli to our breakfast menu. This recipe is an oldie but a goodie, and always a hit with the littleies, so I thought I'd share it with you. It uses simple store cupboard ingredients, mixed in with some fridge ingredient staples, which make it easy to make. There’s also the option of adding some lovely additions - like nuts, seeds or berries- to mix up the flavours and add extra nutrition. My favourite thing about Bircher Muesli is if you make up a big batch on a Sunday evening it can last up to three or four days in the fridge - so you've got breakfast sorted for the best part of the week before the week has even started! Win!

As this cold winter continues we're still on the hunt for warming, satisfying dinners at the end of the day. These mini vegetable pot pies are just the ticket for a perfect, mid-week warming supper which provides a nutritious meal for the whole family.

Broccoli Cheese Quesadillas

Life is busy, after school is busy so I'm always looking for and trying to create quick go to dinners which we all enjoy but also ensuring the meal has some goodness too. Arriving home late with three hungry tummies, a tonne of school bags and lunch boxes to unpack as well as sports gear and homework to do this quick broccoli cheese quesadilla recipe really is a little mummy saver. It has a healthy dose of green vegetable to ease the mummy guilt but it is also tasty and almost pizza like so you don't get any rejection from fussy toddlers.

Clean Little Honey Puffs

Every child I’ve met likes cereal and, wow, there is a lot of choice on the supermarket shelves these days, isn’t there? The boxes are designed to entice little ones, bursting with colours, cartoon characters and free gifts. But these sparkly boxes are almost always sugar bombs, laden with refined grains and  sweeteners which don’t make for the best start to the day: no one likes a sugar crash, especially in a screaming toddler.

Warming Vegetable Bean Chilli Bowls

We are experiencing some seriously cold weather in this part of the world right now, so - every night- all we are craving is warm, wholesome dinners. After cold school runs, cold swimming lessons and cold football lessons, we just need some serious warmth in our Clean Little Tummies! To meet this need, we are cooking up a budget-friendly, meat-free vegetable chilli this week, which is full of wholesome vegetables, beans and warming flavours. Better still, this recipe makes a big batch, and being completely flexible (and meat-free) it can almost be served in different ways the whole week!

Happy New Year readers! I hope you all had a lovely festive season with your families. It is all back to normal here - back to school, back to work, back to cooking and not just eating the leftovers - so I'm back in the kitchen with lots of new ideas for the New Year.

Carrot Cake Smoothies

Who doesn't love carrot cake? It is a firm favourite in this house and now I've created a smoothie which gives us a flavour fix without all the sugar and nasties. This makes a tasty breakfast or a good afternoon pick me up for tired mummies. You might think the grated carrot won't get paste your Clean Tummies but try it, mine ate it without knowing what was in it and were so surprised when I told them they'd just eaten carrots for breakfast! You won't know until you try!

It's Healthy(ish) Hot Chocolate Time!

The mornings are dark, the nights are even darker, the leaves are on the ground...which can only mean it's time to cosy up for Autumn. And what better way to do that than with a warming mug of hot chocolate - filled with some natural sweetness and goodness for you and your Clean Little Tummies of course!

Pumpkin Spice (Pancakes!) & All Things Nice

We're loving Autumn here at Clean Little Tummies. Yes, we are without a proper kitchen. Yes, we don't have a floor, and yes, our fridge is in the garage. But how can we not get excited by all the gorgeous Autumn feels that are around? The colours, smells and sounds get me every year - how is it all so beautiful? Walking to school every day, crunching through the leaves is one of my favourite sounds. And, of course, all the pumpkins that are everywhere. Is there an Instagram feed without a little white pumpkin going on? I don't think so. 

Clean Little Lunchboxes

For those of you who follow me on Instagram you will know that we are in the midst of kitchen (& house) renovations and even though some of my daily cooking has to be compromised the one thing that can't be is lunch boxes! Whilst I do love cooking and preparing food for my family I do find lunch boxes a chore and I love seeing new ideas. I like them to be healthy but easy.  I usually do them either when I'm preparing dinner the night before or when I preparing breakfast so it is always a busy time. I try to mix it up as much as I can with some simple ideas to fill them up for their afternoons and I thought I would share some of my lunchbox ideas with you.

Hello September! Another summer done, another Autumn to look forward to. With back to school in full swing, I'm back to packing after school snacks! I thought this week I would share one of my latest Clean Little Tummies snacks with you. It is an easy snack, takes only 15 minutes to prepare, and has been a winner here for the first week of term (and I am pretty partial to them too!) 

Get Ready for Summer Holidays

As I write, we are in the last full week of school here in the UK, with six long weeks stretching out in front of us. I think every Mum (& Dad) in the country is filled with excitement - and terror. How lovely it will be to not do the school run for six weeks, constantly giving them time deadlines, 'hurry up we're going to be late, the bell has gone, come on...', and giving them some freedom to play and just be children. The flip side, of course, is less appealing: Sibling arguments, whinging when they don't get to do exactly what they want, and the constant need for food, snacks, picnics... and more snacks.

Summer Sunshiney Smoothies

We are in the middle of renovations this week so things have been busy here in the Clean Little Tummies household. And just as I felt like everything was falling apart, and it was all storms-and-darkness, pineapples appeared at our local market! Such a sunshiney, tropical fruit, and we've had the sunshine to match recently. This led me to think about some tropical flavoured smoothies and - in between walls being knocked down- I've managed to rustle up a little favourite of ours.
